2 4 pound chickens
1 c Southern BBQ Rub

2 tb Salt
2 tb Sugar
2 tb Brown sugar
2 tb Ground cumin
1 tb Ancho chile powder
1 tb Pasilla chile powder
1 tb Freshly cracked black pepper
1 tb Cayenne
4 tb Paprika
Prepare a wood or charcoal grill and let it burn down to embers.
Rub the chickens with the barbecue rub. Let sit in the refrigerator for 1
hour.
On the grill place the chickens, on the side with no fire. Cover the grill
and vent slightly. Cook for 3 hours or until chickens are cooked through.
Southern Rub: Mix all ingredients together well. Makes about 1 cup Posted
