Quick Horseradish Sauce

2 c Finely-grated horseradish
1 c White vinegar
1 tb Sugar
1/2 c Sour cream
Salt; to taste
Freshly-ground black pepper;
-to taste

In a small saucepan combine horseradish, vinegar, sugar and bring to a
boil. Simmer until liquid has reduced by half. Cool slightly. In a small
bowl whisk sour cream to lighten. Add horseradish mixture, stir until
well-combined and season to taste with salt and pepper. This recipe yields
about 3/4 cup of sauce.
