4 Long red chillies
2 Cloves garlic
20 ml Fish sauce
100 g Castor sugar
100 ml Vinegar
100 ml Water
Pound garlic and chilli in mortar and pestle then add all ingredients into
a small size saucepan, bring to boil and reduce until a syrup consistency.
Bottle when cold.
~ This will keep indefinitely as the sugar and vinegar are the
preservatives, but it tastes so good it won’t last long before you need to
make more. This would make a much appreciated gift for fire eating food
